📝 Ingredients
For the Marinade:

500g boneless chicken, cut into bite-sized pieces

½ cup thick curd (yogurt)

1 tbsp ginger-garlic paste

1 tsp red chili powder

For the Gravy:

1 bay leaf

4-5 cashew nuts

2 medium onions, finely chopped

2 medium tomatoes, pureed

1 tsp red chili powder (adjust to taste)

½ tsp cumin powder

Salt to taste

2 tbsp fresh cream

1 tsp kasuri methi (dried fenugreek leaves)

🍳 Cooking Instructions
1. Marinate the Chicken
In a bowl, mix chicken with yogurt, ginger-garlic paste, chili powder, turmeric, garam masala, and salt. Cover and refrigerate for at least 30 minutes (longer the better — overnight works best).
2. Cook the Chicken
Heat 1 tbsp oil in a pan. Cook the marinated chicken on medium-high heat until it’s golden brown and almost cooked through. Remove and set aside.
3. Prepare the Gravy
In the same pan, add butter and a bay leaf. Toss in the cashew nuts and chopped onions. Sauté until the onions turn golden.
Add ginger-garlic paste and cook until the raw smell is gone. Then, stir in the pureed tomatoes and cook until the oil separates.
Add red chili powder, coriander powder, cumin powder, and salt. Mix well and let it simmer for a couple of minutes.
